Abstract: Rice-noodle is a kind of staple food in rice class and it enjoys a long history. In the period of the early Qin dynasty, powdery rice flour foods started appearing on the table of ordinary families. Later, it developed into rice cakes and a series of steamed dishes. Line-shape rice flour foods were closely connected with noodle and the foods had been eating for a very long time. Today, it has become distinctive flavor food or snacks because of the regional disparity it is distributed. In the course of the formation, development,spread and localization of rice-noodle, its names in historical documents are also continuously changing. In this paper, the authors trace the formation and changes of its name, making the historical line of rice-noodle clearer and providing preparation and reference of its profound influence in food culture.
